Instructions
  1. Saute the chicken in the coconut oil in a medium-sized saucepan.
  2. When the outside of the chicken has all turned white, add in the coconut milk and the chicken broth and mix well.
  3. Add onions then cook for 3 minutes more.
  4. Add in the carrots, celery, and tomatoes.
  5. Add in the ginger, curry powder, and cornstarch.
  6. Add garlic, salt, pepper, lemon juice.
  7. Cook on medium for about 3 hours in your slow cooker.

This recipe is for a Paleo Sweet Potato Bread that could fit into anytime of year. Sweet Potatoes are a great source of many vitamins and minerals and make a great base for muffins, bread, and other dessert or snack treats.

This recipe is super easy, and tastes great!

Almost all of the ingredients are stocked ingredients in the Paleo Pantry including coconut milk, coconut flour, maple syrup and dark chocolate.

Paleo Sweet Potato Bread
Instructions
  1. Preheat oven to 400 degrees
  2. Put all ingredients in medium-sized bowl (except chocolate)
  3. Using a mixer, mix until smooth and well incorporated.
  4. Add chocolate and gently mix, using a spoon.
  5. Pour batter into the prepared loaf pan.
  6. Bake for 25-30 minutes until lightly browned.
  7. Allow bread to cool in the pan and remove to the rack.
